When I was about 11 or so, the mother of a neighborhood chum of mine came over to our house and gave us a large brown grocery bag filled with morels. I remember my mother asking her, “Where did you find all these morels?”

Mrs. Morrison just smiled. Of course, she wouldn’t tell. Who could blame her?

We ate them for days; I never had anything like them in my life. A few weeks after they were gone, when Mom and I were at the supermarket, I asked her if we could get some more of those great that mushrooms Mrs. Morrison had brought over.

Of course we couldn’t. Morel season was over, and dried morels were a good two decades away from making it into our local supermarket. We’d have to wait another year.

Their rarity makes them all the more precious. Here’s one of my favorite French recipes for Morels; it’s a particularly good choice if you don’t have a lot of them and have to stretch them with a few other varieties. Then again, if you have a wonderful Mrs. Morrison knocking on your door and giving you a bag-full of morels, use them exclusively!

Easy French Recipe for Morels: Tagliatelle with Morels

Ingredients
  • 1 pound morel mushrooms (or use assorted mushrooms, such as morels, cremini, white, shiitake, and chanterelle), cleaned
  • 8 ounces dried tagliatelle
  • 2 tablespoons unsalted butter
  • 2 large shallots, minced
  • 2 garlic cloves, minced
  • ½ cup dry white wine
  • 1 cup heavy cream
  • 1 cup grated Comté, Gruyère, or Emmental cheese (4 ounces)
  • ½ cup toasted walnuts
  • ¼ cup snipped fresh parsley
Instructions
  1. Trim mushrooms; slice the morels in half. If using shiitakes, discard the woody stems.
  2. Cook tagliatelle according to package directions. Drain and keep warm.
  3. Meanwhile, melt the butter in a large skillet over medium heat; add the shallots and garlic and cook briefly until the shallots are just softened, about 3 minutes. Add the fresh mushrooms; cook and stir until the fresh mushrooms are softened, about 5 minutes.
  4. Add the wine to the skillet. Bring to a boil and simmer gently until the wine has evaporated, about 1 minute. Off the heat stir in the heavy cream. Return to heat and bring to a boil; cook until slightly thickened, about 2 minutes. Remove from heat; add the Gruyère, stirring just until melted.
  5. Add the drained pasta to the skillet; toss to combine. Divide among wide, shallow bowls and sprinkle with the walnuts and snipped fresh parsley to serve.

  • Oh my gosh, my Dad used to take us morel hunting when we were little. It was like an Easter egg hunt for us. When you would find one there was always a couple more near by and before long we had a grocery bag full.

    I made this recipe last night and it was delicious. I did not have any of the cheeses recommended so I substituted grated asiago. Also, my family really enjoyed the treat of roasted walnuts on the top. With a salad, we had a very special meal.
